Ingredients
1 kilogram lean diced lamb
1 teaspoon salt
2 cloves garlic finely chopped
1 piece ginger about 2 inches finely grated
500 grams natural yoghurt
3 tablespoons lemon juice
4 tablespoons cooking oil
½ teaspoon cumin seeds
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons garam masala
1 teaspoon paprika
1 teaspoon turmeric
1 onion finely chopped
2 cloves garlic finely chopped
4 asda thin green chilli peppers finely chopped
400 grams chopped tomatos
2 tablespoons tomato puree
¼ pint water
Directions
Mix the 1 teaspoon salt 2 cloves garlic finely chopped 1 piece ginger about 2 inches finely grated 500 grams natural yoghurt 3 tablespoons lemon juice in a large bowl, mix in 1 kilogram lean diced lamb and leave to marinade for as long as possible.
Heat the oil in a wok and add ½ teaspoon cumin seeds and fry for 2 minutes (don’t heat the oil too high or it will burn.
Add 1 onion finely chopped 2 cloves garlic finely chopped 4 green asda thin chilli peppers finely chopped and fry for 5 minutes
Add 2 teaspoons ground coriander 2 teaspoons ground cumin 2 teaspoons garam masala 1 teaspoon paprika 1 teaspoon turmeric and fry for 2 minutes
Add the lamb and marinade and cook for 5 minutes
Stir throughout all the above as necessary
Transfer everything from the wok to a large saucepan and stir in 400 grams chopped tomatos
2 tablespoons tomato puree ¼ pint water and simmer until it thickens which will take 90 to 120 minutes stirring occasionally, serve with rice.
